How to Make a Cosmic Brownie

The chocolate brownie is one of the recipes that guarantee the success of any celebration worth its salt. Everyone likes it, both young and old, and it is very easy to prepare. It is one of my favorite recipes and on the blog you can find it in multiple versions: traditional brownie , a fun brownie with Smarties , the simple five-ingredient brownie , the orange-flavoured brownie , the healthiest, the banana brownie , with walnuts and without nuts, even with white chocolate … There is something for all tastes.

This weekend I have given it a new twist by preparing the “ cosmic ” modality of this American sweet and I have been fascinated with the result. It differs from the rest because it has chocolate coverage (what we call ganache) and sugar cubes on top. The first provides creaminess and body, the second a very fun crunchy point.

Needless to say, for the base of the brownie we can use the recipe with nuts, orange or any other that you like better without compromising the result. My friends often ask me to prepare brownie for children’s birthday parties and I usually take the traditional one, but from now on I’m going to change it to the “cosmic”. Much sweeter, it’s another level.

I leave you with this brownie with an intense chocolate flavor , with a dense and juicy texture and the crunchiness of the sugar cubes. A recipe that has no mystery and whose result is delicious.


  • 140g of butter
  • 200g white sugar
  • 65g panela or brown sugar
  • 90g pure cocoa powder
  • 1/2 teaspoon vanilla essence
  • 2 eggs L
  • 1 tablespoon of honey
  • 85g all-purpose wheat flour
  • 10g fine corn flour
  • 1/4 teaspoon salt
  • For the coverage and decoration of the cosmic brownie:
  • 200g dark chocolate for desserts
  • 85 g. of creme de leche or liquid cream to assemble (34% MG)
  • Colored sugar to decorate (to taste)

Preparation of Cosmic Brownie

  1. We line a mold of 20 x 20 cm. with parchment paper and reserve it.
  2. We turn on the oven at 175º C, with heat up and down, so that it heats up. In the time it takes to prepare the mixture, it will be ready to bake the brownie.
  3. In a wide and deep bowl, add the butter and melt it in the microwave. The ideal is to do it at medium power and at
  4. 30-second pulses, to prevent it from splashing inside the oven if it reaches too high a temperature.
  5. Add the two types of sugar to the container and mix well. They will integrate well with the heat, but it will be necessary to stir a couple of minutes. Next we add the pure cocoa powder, sifting it with a strainer to undo the possible lumps that form in its container. Remove until integrated.
  6. If the mixture is lukewarm we can now add the eggs, the vanilla essence and the honey. Otherwise, wait a few minutes until it cools down. In any case, once these ingredients are added, we remove them to integrate.
  7. Finally we add the wheat flour, the fine corn flour and a pinch of salt. Stir until a homogeneous mass is obtained. Fill the mold with it and spread it over the entire surface. Put the container in the oven and cook the brownie for 25-30 minutes. We remove it and let it cool completely before continuing with the recipe.

From the Cosmic Brownie Topping

  1. When the brownie is cold we proceed to prepare the coverage. Chop the chocolate and place it in a wide and deep container. Heat the cream in the microwave, just enough to bring it to the boiling point.
  2. We pour it over the chocolate, cover the container with a cloth and let the heat melt it. In a matter of five minutes it will be ready to stir and homogenize the chocolate cream.
  3. We cover the brownie with it, sprinkle with colored sugar and put the brownie in the fridge to solidify for one or two hours.
  4. Once the cooling time has elapsed and with the coverage solidified, we can proceed to unmold the brownie, cut it into squares and enjoy a piece as we like. It is delicious with a cup of coffee or a glass of fresh milk.

Tips for Yummy Cosmic Brownies

  1. This brownie spreads much more than the classic one because the coverage is quite filling. It is very likely that you will not finish it and you will have portions left over, unless you share it with a large group of people. Keeps in good condition and juicy if you store it in an airtight container: three days at room temperature and up to a week in the fridge.
  2. It is convenient that the brownie rest and cool before unmolding so that it acquires consistency and the flavors settle.
  3. Unlike the other biscuits, the brownie dough does not have yeast so it is flat. Don’t be scared because it doesn’t rise during baking, that’s how it should be.
  4. Each oven is a world. Our cooking times and temperatures are indicative and, although a good starting point for the preparation of the brownie, it is important that you take the point from yours.
  5. It is characteristic of the brownie that it has a square shape, so the mold in which to bake it should therefore be square or rectangular. With the quantities indicated and so that the mixture had the height that you see in the photos (2-3 cm), we have used a 20 x 20 cm mold.
  6. As for chocolate, choose your favorite brand, and if the little ones like milk chocolate, it will be softer and with a chocolate flavor. If you like chocolate at home, real chocolate, always choose one with a cocoa content of more than 60%, in this case we have chosen one with 70%.
